Paleo Pancakes



Every now and again, Flavio and I try to do a month of Paleo/Primal eating. We're thinking April for our next 30 day grain-free challenge. But even when we're not Paleo-ing, we love to make Paleo Pancakes. They are packed with protein, are gluten-free and totally delicious. We make these most Saturday mornings. We'll probably never make regular pancakes again.

OUR PALEO PANCAKES

Mix together 4 ripe bananas, two eggs, and three heaping spoonfuls of almond butter. Make sure the mixture has the same consistency as regular pancake batter. If it's too soup-y, add more almond butter. Then mix in a dash of vanilla, and a pinch apiece of cinnamon, cayenne pepper, and salt. Cook in a buttered pan just like you would regular pancakes. Top with sliced banana and a little maple syrup, if you like. Makes about 6 large pancakes.
